EVALUASI AKTIVITAS ANTIOKSIDAN KOMPLEKS KITOSAN-FRUKTOSA DENGAN VARIASI KONSENTRASI FRUKTOSA



Chitosan is a modification of chitin compounds that are widely found in the
outer skin of Crustaceae animals such as shrimp. Chitosan can be used as an
antioxidant but has not produced antioxidants optimally. Even in various
applications, chitosan tends to be fragile and break easily. This can be overcome
by adding materials and modifying chitosan. The right modification can produce
good antioxidant compounds compared to the use of chitosan alone. Based on
previous research, chitosan monosaccharide complex proved to be better than
chitosan alone.
The fructose chitosan complex produces the Maillard reaction which is
formed from a chemical reaction that connects the carbonyl group of fructose with
the amino group of chitosan. The method used for antioxidant analysis is the DPPH
method. The data obtained are absorbance data of samples and blanks and then
processed into percent inhibition values using the regression equation. The DPPH
method uses the IC50 parameter, which shows the concentration of the test extract
that is able to capture free radicals as much as 50% obtained through the
regression equation. The results of the analysis of variance showed that there
was an effect of chitosan and fructose simultaneously (together) on the CFC
complex in chitosan-fructose. The antioxidant activity of the three samples was
significantly different from each treatment. IC50 values ranged from 170 ppm to
351 ppm where the highest antioxidant activity was with a CFC ratio of 2:1
