PERBEDAAN KADAR VITAMIN C PADA BROKOLI (Brassicaoleraceavar. Italica) DIPASARTRADISIONAL DAN PASAR MODERN DENGAN METODE SPEKTROFOTOMETRI UV-VIS



Broccoli(BrassicaoleraceaL.var.italica)isavegetableplantfrom the cabbagefamily(Brassicaceae).Broccolicontainshigh levelsofVitamin B, VitaminC,FolicAcidandBetaCarotene.Inaddition,broccolialsocontains severalminerals,suchascalcium,iron,phosphorus,potassium andsulfur.The contentofVitaminCinBroccoliis93.2mg/100g.Thepurposeofthisstudywas todeterminethedifferenceinlevelsofVitaminCinbroccolipurchasedatthe traditionalmarketofSemarangCityandthemodernmarketofSemarangCityby usingtheUV-VisSpectrophotometrymethod. ThemethodusedinthequalitativeanalysisofVitaminCisidentification bycolorreaction using asolution ofmethyleneblueand 10% NaOH and FeSO45%.QuantitativeanalysisofVitaminCusingtheUv-VisSpectrophotometry method.TheresultsshowedthatthevitaminCcontentofbroccolipurchasedat traditionalmarketsusingtheUV-VisSpectrophotometrymethodwas0.81%, whilethevitaminCcontentofbroccolipurchasedinthemodernmarketusingthe UV-VisSpectrophotometrymethodwas2.38%.
